St. Patrick's Day Chocolate Mini Peanut Butter Cups Recipe

For the green chocolate:
- 1.5 cups green candy melts
For the dark chocolate (optional):
- 1/8 cup - ¼ cup dark chocolate chopped, depending on how much you would like
For the peanut butter filling:
- ½ cup all-natural peanut butter
- ¼ cup honey
- 2 tablespoons coconut oil
For the shamrocks:
- White fondant Fat Daddio's tastes the best
Line muffin tin with liners. Melt dark green chocolate and spoon into liners and chill until hardened, 10-15 minutes in the freezer or refrigerator.
Melt optional dark chocolate, layer onto green and chill to harden.
Whisk together peanut butter, honey and coconut oil over low heat until smooth. Spoon on top of chocolate and chill to harden.
